Elly’s Pan Release Recipe (DIY non-stick pan coating)
Hello bakers!
This week I shared a video to Elly’s Everyday Wholegrain Sourdough on Youtube demonstrating my easy method for making a one-piece, folded baking pan liner from non-stick baking paper (‘parchment paper’ in some countries). Those of you familiar with my soap making videos may recognise the technique.
In the video I also shared my special recipe for a DIY pan release mixture that makes any bread tin, cake pan or pizza tray completely non-stick! Only a small amount is needed, just smear it on and fill your pan as usual. It works just as well (if not better) than commercially made cooking spray and you can make a jar of the mixture in minutes which you can then store in the fridge indefinitely. It’s brilliant stuff!
The recipe
Ingredients
1 cup coconut oil (not the fractionated type, just the regular type that becomes solid at cool temperatures)
1/2 cup rice flour (I use home-milled brown rice flour, but any will do)
1/3 cup lecithin granules or 1/4 cup liquid lecithin
*I have only ever found soy lecithin granules in Australia. In other countries, you may be able to find sunflower and soy lecithin in both liquid and granular form. Either is fine to use, check with your local health food shop. Note that you can extend the shelf life of lecithin significantly if you store it under refrigeration (I store mine in the freezer).
Method
Melt the coconut oil if it is solid. Place the jar into a bowl of hot water, or give it a few short bursts in the microwave and stir to fully melt.
Place all of the ingredients into a blender (I use my bullet blender) and blend for about 10 seconds until the mixture is completely smooth and emulsified.
Pour the mixture into a clean jar and refrigerate. It’s that easy!
